             RECIPE

                                      A Southwest twist on a classic recipe with a few healthy changes!
             CHIPOTLE
             CHICKEN SALAD                          WHAT YOU NEED

                                                    • 1 large avocado              • 1 Tbsp Chipotles in Adobo
                                                    • 3 Tbsp nonfat Greek yogurt   • 1 lb rotisserie chicken
                                                    • 1 lemon, juiced and zested   • 1 cup walnuts
                                                    • 1 tsp black pepper           • 4 stalks celery
                                                    • ½ tsp cumin                  • 1 head butter lettuce

           HOW IT’S MADE                                                                                SERVES 4
            1.  Dice chicken and celery.                      3.  Toss chicken, walnuts, celery, and avocado. Mix together

            LEFTOVER EGG
            SALAD                                WHAT YOU NEED
                                                 • 6 hard boiled eggs, peeled     • 1/4 c nonfat Plain Greek Yogurt
                                                 • 1 scallion                     • 1 lemon, juiced and zested
                                                 • 1 Tbsp Dijon mustard           • 1 Tbsp dill
                                                 HOW IT’S MADE                                          SERVES 3
                                                 1.  Tear away egg whites from the   4.  In the same bowl, add mustard,

            CHICKPEA & ORZO
            PASTA SALAD                          WHAT YOU NEED
                                                 • 1 can No Salt Added Chickpeas  • ⅓ c. pistachios
                                                 • 1 c. orzo, dry                • ⅓ c. Feta cheese
                                                 • ½ small red onion             • ⅛ c. mint
                                                 • 1 medium cucumber             • ⅛ c. parsley
                                                 • 1 lemon, juiced and zested    • Salt and pepper as desired


           HOW IT’S MADE                                                                                SERVES 8
            1.  Drain chickpeas and add to a medium-large bowl.  6.  Dice red onion and cucumber.
